Currently there are thousands of known phytochemicals; many of these are thought to protect against a range of diseases from prostate cancer to coronary heart disease, and there has been much recent interest in isolating and characterizing new phytochemicals with a view to assessing their potential in human nutrition and health.
This book presents 35 chapters covering the extraction, structural characterization, screening and pharmacology of a number of different types of phytochemical. Specific compound classes discussed include flavonoids, lignans/polyphenols, phytocannabinoids, polyamines, alkaloids and triterpenes, with a broad range of potential biological activities. A number of chapters will describe studies done to assess the antioxidant activity of extracts obtained from plants found all over the world, from European mistletoe to Asian bamboo grass.
