"Mass Transfer" is a major, two-volume collection of research covering advanced topics relating to mass transfer, a central process in many areas including materials science, chemical engineering, environmental science, biochemistry and physics. The volumes present research by experts from around the world to give a diverse picture of current issues in mass transfer. The volumes are arranged thematically for ease of use. Major themes include mass transfer in sustainable energy production and environment oriented numerical modelling, such as in biodiesel production and bioreactors, mass transfer in multi-phase systems, and mass transfer in chemical engineering applications, such as in polymer solids and solutions, and mass transfer in the production of foods including rice and cheese. Advanced topics include the potential applications of supercritical fluids, approaches to modelling, mass transfer in desiccant wheels and liquid-liquid extraction. The volumes will be extremely useful both as reference works and as starting points for new research for students and investigators in a range of range of contexts.
